  • 1 cup basmati rice, soaked and drained
  • 200g paneer, cubed
  • 1 large onion, thinly sliced
  • 2 tomatoes, finely chopped
  • 1/2 cup yogurt
  • 2 tablespoons biryani masala
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon cumin seeds
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 2-inch cinnamon stick
  • 1 bay leaf
  • Fresh coriander leaves, chopped
  • Fresh mint leaves, chopped
  • Ghee (clarified butter) or oil for cooking
  • Salt, to taste


Step 1: Marinating the Paneer

  1. In a bowl, mix yogurt, half of the biryani masala, ginger-garlic paste, turmeric powder, and red chili powder.
  2. Add the paneer cubes to the marinade. Cover and let it marinate for at least 30 minutes.

Step 2: Preparing the Rice

Parboil the soaked basmati rice with a pinch of salt until it’s 70% cooked. Drain the water and set aside.

Step 3: Cooking the Biryani

  1. Heat ghee or oil in a heavy-bottomed pan. Add cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté until aromatic.
  2. Add sliced onions and sauté until golden brown.
  3. Add chopped tomatoes and cook until they turn soft and the oil separates.
  4. Add the marinated paneer along with the marinade. Cook for a few minutes until the paneer is slightly browned.
  5. Layer half of the partially cooked rice over the paneer mixture. Sprinkle biryani masala, fresh coriander, and mint leaves.
  6. Add the remaining rice as the top layer. Garnish with biryani masala, coriander, and mint leaves.
  7. Cover the pan with a tight-fitting lid and cook on low heat for 20-25 minutes to allow the flavors to meld together.

Step 4: Serving the Paneer Biryani

  1. Gently fluff the biryani with a fork to mix the layers.
  2. Serve hot, garnished with fried onions, fresh coriander, and mint leaves.
  3. Enjoy your Paneer Biryani with raita and your favorite salad!
